You'll arrive in Palermo whenever works best for your schedule, with an optional private transfer available if you need it. Once at your hotel, settle in and get comfortable. Dinner is on your own this evening, so you can explore the area or rest up before the days ahead. You'll stay overnight in Palermo.

Palermo
Breakfast at your hotel gets the day started, then you'll head to Monreale Cathedral to see the cloister and mosaics. Back in Palermo, you'll walk through the Cathedral, Martorana Church, and Cappella Palatina to see the architectural details. Lunch features local food and regional specialties. After eating, stop by Teatro Massimo and Pretoria Square to see the fountain. Tonight you can join an optional New Year's Eve dinner celebration, or keep it low-key. Overnight in Palermo.

Castelbuono - Catania
After breakfast, you'll travel to Cefalù, a medieval seaside town where you can visit the Norman Cathedral and check out the Mandralisca Museum if you're interested. From there, head inland to Castelbuono for lunch and try the local Fiasconaro panettone made with regional PGI and PDO products. The afternoon takes you to Ventimiglia Castle and its chapel, plus you'll have time to walk through Christmas markets and see what concerts or exhibitions are happening. Later, transfer to Catania for hotel check-in. Dinner is on your own, and you'll stay overnight in Catania.

Mount Etna - Taormina - Catania
Start with a quick visit to Catania's fish market early on, then drive out to Mount Etna, Europe's highest volcano at about 3,350m/10,990ft. You'll stop at Rifugio Sapienza to see the Crateri Silvestri volcanic cones and the ancient lava flows around them. There's time to taste local honey and regional products from the area. After that, head to Taormina for lunch at a restaurant in the historic center. Check out the Greek theatre with its views over Giardini Naxos bay and Mount Etna in the distance. You'll have free time to wander the medieval streets and shop around. Before heading back to Catania, you'll see the Riviera dei Ciclopi coastline. Dinner is on your own, and you'll stay overnight in Catania.
