Itinerary
- Day 1
Bangkok
You'll arrive in Bangkok and have time before the 5 pm group meeting. If your flight gets in early, check out the Grand Palace and Temple of the Emerald Buddha, walk through Khao San Road, or grab a Thai massage. When 5 pm rolls around, meet up with your group leader and the other travelers. Later that evening you'll head to Krua Apsorn restaurant for a welcome dinner where you'll get to know everyone and try authentic Thai food, then walk around the neighborhood sampling Thai sweets.

- Day 2
Samut Songkram
After breakfast, head out to Tha Kha Floating Market where you'll walk past vendors along the canals and climb into a paddleboat to explore the waterways. You'll stop at a riverside operation to see how coconut palm sugar gets made. Back in Bangkok, the afternoon is yours to shop, relax, or wander around on your own. Come evening, take a walking tour through Chinatown with your group leader, try local street food, and if you're interested, join other travelers at a bar with live music.

- Day 3
Bangkok to Ayutthaya
After breakfast, drive by private vehicle to a local village and community farm for a Central Thai cooking class. You'll learn about traditional farming and prepare lunch from fresh garden ingredients, making dishes like kaeng som, spicy fish cakes, and watercress salad with chicken, plus a few desserts. Later, board a longtail boat and cruise the Chao Phraya River to visit a Buddhist temple on a remote island. Then head to Ayutthaya where you'll have a free evening to explore on your own.

- Day 4
Ayutthaya
Explore Ayutthaya, the ancient second capital of Siam. Stop at a street food stall where someone will show you how to make roti sai mai, a thin pancake with cotton candy strands. Lunch is guay-tieo-ruea, boat noodles with pork broth, roasted meat, Thai pork balls, morning glory, and green onion. Take a guided tour of temple ruins and archaeological sites, seeing the headless Buddhas at Wat Phra Mahathat and a Buddha head surrounded by Banyan tree roots. After dinner, board an overnight train to Chiang Mai.

Chiang Mai
You'll arrive in Chiang Mai by mid-morning, the cultural heart of Northern Thailand known for its temples and Northern Thai food. Have a plant-based lunch at a local restaurant using organic vegetables. Take an orientation walk through the old city, stopping at Wat Chedi Luang and getting coffee at Akha Ama, a social enterprise started by an Akha tribe member to support local growers. Rest before dinner, and if you're interested, check out the Chiang Mai Night Bazaar for handicrafts and street food.

Travel to a small Thai village to stay with your homestay host Aoi overnight. You'll stop for lunch at a restaurant specializing in fermented rice noodles, then visit local producers including a mushroom farm to pick up ingredients for a Northern Thai cooking class. Experience a traditional khan tok dinner with eleven dishes like nam prik ong, deep fried vegetables, hung leh curry, and mushroom larb. Eat while enjoying live local music and dancing.

Start with a Northern Thai breakfast of gai tod, fried rice, sweet sticky rice, and egg custard. Say goodbye to your hosts and drive to Doi Suthep, one of the country's most beautiful temple complexes. Climb the 300-step naga-guarded stairway to reach the temples where you'll hear Buddhist monks chanting and see sweeping city views. Back in town, have lunch of khao soi, the region's famous curry noodle dish. This afternoon, wander through Warorot Market, one of Chiang Mai's largest markets and a real social hub, where you can glimpse daily life and try regional snacks like sai ua or bamboo worms.
