- Day 1
Delhi
You'll touch down in Delhi and connect with your local leader and group at a 6 pm welcome meeting. Afterward, head out to try North Indian cuisine starting with a vegetarian thali feast at a local spot, then duck into a hole-in-the-wall place for Delhi's famous kulfi falooda dessert to finish the evening.

Delhi
Breakfast kicks off with Old Delhi's street food scene - bedmi, potato curry, jalebi and paratha flatbread. Take the metro to Jama Masjid, then a rickshaw into Chandni Chowk market. Check out spice warehouses in Khari Baoli and walk through Gali Paranthe Wali lane trying fresh parathas. Vegetarian lunch happens at a Sikh temple, and you can optionally visit a local family this evening for a home-cooked meal.

Delhi to Agra
Board a local air-conditioned train heading to Agra and the Taj Mahal. Walk through Agra Fort to see throne rooms and ornate mosques, then spend time at the Taj Mahal grounds watching how the light changes from day into evening. Later, attend a Mughlai cooking demonstration where you'll learn to prepare malai ki sabzi and onion paratha.

Drive to Jaipur, the 'Pink City' known for its distinctive pink buildings and lively bazaars. Take a rickshaw to the iconic Hawa Mahal for photos, then try local kachori at the famous Rawat Mishthan Bhandar. This evening you can optionally catch a Bollywood movie at Raj Mandir Cinema.

Jaipur to Amber
Head to Amber Fort, a hilltop complex overlooking Maota Lake with Rajput architecture throughout. Explore the ornate palace and see the Sheesh Mahal with its mirror-covered walls. Lunch happens at LMB restaurant (running since 1727) where you'll try their Ghevar or mawa kachori. The day ends with a hands-on cooking class at a local home learning to make plant-based Rajasthani dishes like ker sangri.

Jaipur to Bijaipur
Leave the city and drive to Castle Bijaipur in the Mewar region of south-central Rajasthan, your heritage accommodation for the next two nights. Stop along the way for lunch at a local restaurant. The 16th-century castle hotel has original domes, arched windows and fortified walls. Relax by the pool or in the gardens and experience Mewar hospitality.

- Day 7
Bijaipur
Jump in a jeep and explore the surrounding farming communities in this major agricultural area. Depending on the season, you'll pass fields with wheat, corn, maize, lentils, aubergine, spinach, fenugreek, okra, green chilies, tomatoes, potatoes, gourd, onion and garlic, plus spices like turmeric and cumin. Return to the heritage stay and join the estate's chef to see how these ingredients go into Rajasthani cooking, then have lunch in the palace grounds.

Bijaipur to Udaipur
Travel to Udaipur, a charming city with Hindu temples, palaces and well-known Jain temples. Visit a Jain temple to learn about the religion and its distinctive cuisine that excludes root vegetables due to spiritual beliefs. Taste authentic Jain thali at the famous Natraj restaurant operating since the 1960s. The evening is free and Udaipur has several rooftop restaurants perfect for watching the sunset over the central lakes.

Udaipur
Explore Udaipur, the 'City of Lakes', built around Lake Pichola's shores. Walk through winding streets and browse shops full of traditional Rajasthani goods. Check out the City Palace, one of India's largest royal palaces, with vivid murals, antiques and royal utensils inside. The rest of the day is yours to explore on your own.

Udaipur to Mumbai
Start at a local market browsing fragrant stalls and gathering ingredients for a cooking class. Learn to prepare a traditional vegetarian north Indian thali with rice, dahl, vegetables, roti, papad, curd and a sweet dish. Have lunch with the food you prepared, then head to Abu Road train station. Board an overnight train to Mumbai leaving late evening and arriving after midday tomorrow.

Mumbai
Arrive in Mumbai after your overnight train, reaching your hotel by mid-afternoon. Known as Bombay until 1995, this is India's commercial capital, largest city and food capital all in one. In the late afternoon, head down Marine Drive to Chowpatty Beach and watch the sunset while trying bhel puri, pav bhaji, dahi papadi and other popular Mumbai street foods.

Check out the UNESCO World Heritage-listed Chhatrapati Shivaji Terminus railway station and the busy Crawford Markets. Find a restaurant serving Parsi cuisine for lunch, then stroll to the Gateway of India and browse the Colaba street market. The afternoon and evening are free for your own food adventures.

Fly from Mumbai to Goa, where locals say time moves more slowly. The region has lovely beaches, rich traditions, UNESCO World Heritage buildings and food with Portuguese influences. After settling in, take an orientation walk with your tour leader and spend the evening by the Goan beach.

Goa
Start with a trip to Panjim fish market on the way to Old Goa, a historic city on the Mandovi River's banks. Once home to 200,000 residents during the spice trade era (16th-18th centuries), it now has around 2,500. Walk through streets lined with ancient churches and historic buildings, check out the local market, then visit a spice farm to learn how spices are grown, harvested, processed and used in food and Ayurvedic medicine. Freshly cooked lunch happens at the spice farm. End with your final group dinner at the famous Suza Lobo restaurant by the ocean, choosing from prawns curry rice, chicken xacuti, masala fried fish and more.
