The Trekking to Lao Chai - Ta Van village cover 10-12 km and it is leisure walk, no hard trekking ( it is easy-medium trek with local ethnic guide) and it is for sure, stop several time for taking photos. Cycling in Hoi An and Mekong Delta is interesting and funny and it is very easy. Cycling will help you to see the rural areas in Vietnam. In general, All activities in this 12-day tour is suitable for everyone. And all the activities are not compulsory to join. It depends on you.
