    Tbilisi

    You'll arrive in Tbilisi and meet your group at a welcome meeting at your hotel around 6 pm. After getting settled, head out for an included dinner where you'll try local Georgian dishes like chkmeruli (chicken in garlic and herbs) and chashushali (beef stew).

    Tbilisi

    This morning a local guide takes you through Tbilisi starting at Metekhi Church, then you'll walk through the old cobblestone streets and climb up to Narikala Fortress for views across the city. Lunch is included at a restaurant serving traditional Georgian food. After that, the afternoon is free to wander on your own.

  3. Day 3

    Tbilisi to Telavi

    You'll travel to the Kakheti wine region where snow-capped Caucasus peaks rise around you. A guide shows you the 16th-century Gremi Architectural Complex, then you head to a family home for lunch where you'll make mtsvadi (grilled meat skewers) and try your hand at churchkhela (a walnut and grape candy). Later visit a traditional wine cellar to see how Georgians make wine, then drive to Telavi for the night.

  4. Day 4

    Telavi to Pankisi Valley

    Start the morning at Telavi's local markets with your tour leader, then visit a cheesemaker's farm and factory for tastings. From there you'll head to Pankisi Valley and settle into a guesthouse run by your Kist host family in Jokolo. In the evening, join a cooking class where you'll learn to make zhizhig galnash (a Chechen meat dish) before enjoying their hospitality.

    Pankisi Valley to Gudauri

    Walk through villages in Pankisi Valley to learn about Kist culture and how people live here. You'll visit Saint George's Church in Jokolo, the Duisi Old Mosque, and the Ethnographic Museum. Lunch features traditional Kist dishes, and after that you drive toward Gudauri, stopping at Ananuri Fortress Complex which sits above the turquoise Aragvi River.

    Head to Stepantsminda and hike through valleys and woodland to reach Gergeti Trinity Church. If weather cooperates, you'll see Mt Kazbegi and one of the Caucasus's highest glaciers. Back in Gudauri, a local family teaches you how to make khinkali (Georgian dumplings) during a masterclass. You'll return to Gudauri in the late afternoon with your evening free.

  7. Day 7

    Gudauri to Tbilisi

    Drive back to Tbilisi this morning, but stop first at Mtskheta, one of the world's oldest continually inhabited cities. Check out the Jvari Monastery and Svetitskhoveli Cathedral set between two rivers in a unique landscape. Once in Tbilisi, you can soak in the famous sulphur baths, walk by the river, or catch artist pop-ups at Fabrika. The day wraps up with an included farewell dinner at a traditional Georgian restaurant.
