The Mekong River slow boat is fantastic - you spend two days drifting past rural Laos seeing all these riverside villages. In Luang Prabang head to Talad Mued Night Market for Sindad which is this fantastic traditional BBQ with grilled meats and blanched vegetables. When you're in Ho Chi Minh City grab a Saigon cafe sua da (iced coffee with condensed milk) at Ben Thanh Market - it's the perfect pick-me-up while you're exploring.
