- Day 1
Hobart
You'll meet your Journey Director and the group this morning before heading into Hobart's historic center. After walking through Salamanca Place to check out the galleries, you'll browse the vibrant Salamanca Market. A three-course lunch with views over the Derwent River comes next, then you'll head to Mona museum at Moorilla Winery. The day winds down with a relaxing ferry ride back to Hobart.

- Day 2
Derwent Valley
Early Sunday morning starts at Farm Gate Market where you'll meet local makers and growers selling their goods. Then it's into the Derwent Valley to see the old asylum's exercise yard vegetable garden. Lunch is a three-course paddock-to-plate meal at Agrarian Kitchen, and after that you'll explore the historic Salmon Ponds. Before heading back to Hobart, there's a cider tasting to round out the afternoon.

- Day 3
Maria Island
You'll travel to Triabunna and catch a ferry out to Maria Island National Park, which has significant Aboriginal and European history plus abundant wildlife. The day lets you explore the convict-built Darlington township and choose between walking to Fossil Cliffs or Painted Cliffs, or relaxing by the water with lunch. Keep an eye out for wombats, kangaroos, wallabies, possums and Tasmanian devils. That evening you'll enjoy wine on your lodge balcony at sunset, then gather for a BBQ dinner.

- Day 4
Freycinet National Park
A Pennicott Lunch Cruise departs from Coles Bay heading to Wineglass Bay, where you'll spot seals, sea caves, waterfalls and birdlife along the way. Lunch is a ploughman-style spread with smoked meats, salad, cheeses and local bread, paired with wine and beer. Back on land, Freycinet National Park offers a choice: either hike 90 minutes to the lookout or take a guided walk to Cape Tourville. The day finishes with time to relax on Honeymoon Bay Beach.

Coles Bay to Launceston
You'll head north through the fishing villages of Bicheno and St. Helens to reach Bay of Fires, known for its clear waters, white sand and orange lichen-covered granite boulders. Time to explore Big Lagoon and Binalong Bay, and you'll try fresh oysters here. From there it's west to Pyengana Dairy Farm for a cheese-making tour and gourmet lunch. After stopping at Legerwood Carved Memorial Trees, you'll arrive in Launceston for a city circuit tour.

- Day 6
Paddock, Plate & Pantry Tour
This full day focuses on the region's best produce and flavors. First stop is the Tasmanian Gourmet Sauce Company in historic Evandale for sauce tastings and a garden tour. Next you'll visit 41 Degrees South Salmon Farm to taste hot smoked salmon, then walk around Deloraine. Western Tiers Distillery is next, where you'll learn how they produce spirits and taste poitin, vodkas and gins. The day ends with a Celebration Dinner where you and your Journey Director and fellow travellers wrap up together.

Launceston Departure
It's your final morning in Tasmania. You'll exchange contact details with your fellow travellers, then enjoy a relaxed breakfast. A private transfer takes you to Launceston Airport for your onward flights. Your Journey Director can help with any optional tours you may have booked before you leave.
